Because I don’t use preservatives and chemical anti-caking agents, you will get the best life and flavor from your Mattatouille Seasoning by following these steps:

Keep the lid on your seasoning when not in use.
Store in a dark place. If left in sunlight the seasoning will lose color and flavor.
Do not shake seasonings over boiling food or anything with too much steam. Moisture will cause caking (clumping) and changes in flavor.
If you live in a very humid area, store seasonings for future use, or have the large 16oz bottles, keep them in a ziplock bag to add another layer of moisture protection.
